    I am a huge fan of mushrooms although Shiitake and Reishi are particularly rich in anti cancer properties.

    Shiitake mushrooms are packed with B vitamins, are anti-viral, anti fungal and anti bacterial.  They contain lentinan which can help with anti-cancer treatment, linileic acid which can help with weight loss and building muscle.  They are great immune boosters and contain phytonutrients which help protect your blood vessels.  They are a source of vitamin D (much needed at this time of year).  Need I go on………

    In my opinion the best way to eat them is fried in a little olive oil and piled high on a slice of toasted rye bread with some fresh sprinkled parsley.  Hm my mouth is watering and it’s only 9am!!
